Ah pies… I think on the blog I could do a collection so I’m in the kitchen !!! What do you want, we love it at home (and I hope you do too !), and then there is nothing better with a good fruit season. Well, yes, because at the moment apricots and peaches abound on the stalls, and even though I love the crunch as is, I can’t introduce you to simple raw fruits as the recipe !!!

It is, therefore, a tart with apricots and peaches, on which I threw my vest. My usual base of almond, but to change a little the delicious taste of honey is added to the mixture. It is simple, it is good, and it is perfect with this end of summer because we can finally turn it back on the ovens !!!

So take a small part !

Tart apricots and peaches

Ingredients (for one pie)

  • Fifteen of apricots
  • Two fisheries
  • 60 g of almond powder
  • 40 g of cane sugar
  • 40 g of honey (mountain for me)

For the shortbread dough

  • 130 g of flour
  • 90 g butter
  • 45 g icing sugar
  • 1 egg
  • 15 g of almond powder
  • 1 pinch of salt


To prepare your cookie dough, work the butter and sugar by hand so that the butter becomes ” ointment “. Then add the whole egg, and work again the mixture. Add the flour and salt at once and stir until a nice smooth paste. Form a ball and refrigerate 1 hour.

Preheat the oven to 180°.

Roll out the dough on the work plan and have it in a mould. Trim the edges with a knife if necessary.

Mix together the almond powder and the sugar, then put the mixture on the pastry previously pricked with a fork.

Wash and cut the apricots in two. Arrange on the dough, cut side down. Then, cut the peaches into quarters and then arrange them in the center of the pie.

Then add the honey over the fruit.

Bake for 30 minutes.

Good pie !
