To take advantage of the latest eggplant, I wanted the dress more fall and this is the result.
Tart eggplant, white, goat, honey and hazelnut
Ingredients (for 2 pies thin)
- 2 discs of puff pastry the size of a bowl
- 1/2 eggplant white
- 1/4 of goat cheese little refined (here the Picodon)
- 3 c to c of mountain honey
- The hazelnut oil
- The Sichuan pepper
- The flower of salt
Preheat the oven to 210°.
Cut the cheese into thin slices and arrange on each disk of dough.
Add the honey and season with pepper.
Cut the eggplant into thin slices and put them on the goat by making them overlap.
Bake for 25 minutes to properly caramelize.
Drizzle with a little hazelnut oil to the exit of the oven and add the flower of salt and that is all !
