The winter does not bring us not only the cold and the snow (although in recent times, it is not too much the case, 16° here yesterday !), but also brings us to pretty colored fruit come from far away or close to home. Of these wonders, I took pleasure to assemble pie (yes I’m lazy, I just asked above !), on a base of shortbread dough and topped with a cream diplomat that I had discovered with the rainbow fruit cake.

This pie we ate as a family at a taste of gourmet, and I can tell you that it has made its small effect. Finally… not very long because it was quickly devoured !!! Don’t be afraid of the long list of ingredients and the different steps of the recipe, it is not so complicated to achieve !

Tart exotic fruit

Ingredients (for 1 pie)

  • 1 grenade
  • 1 kaki sharon
  • 2 kiwis
  • 1 star fruit

For the cream diplomat

  • 25 cl of milk
  • 2 egg yolks
  • 15 g of flour
  • 15 g of cornflour
  • 40 g of sugar
  • 1/2 vanilla pod
  • 25 cl of liquid cream
  • 20 g of icing sugar
  • 2 sheets of gelatin

For the shortbread dough

  • 150 g of flour of whole wheat
  • 90 g butter
  • 45 g icing sugar
  • 1 egg
  • 1 pinch of salt


To prepare your dough, work the butter and sugar by hand so that the butter becomes ” ointment “. Then add the whole egg, and work again the mixture. Add the flour and salt at once and stir until a nice smooth paste. Form a ball and refrigerate 1 hour.

Make the pastry cream, for this put to soften the gelatin in cold water. Beat the egg yolks with the sugar so that the mixture whitens. Then add the flour and the cornflour to the mixture. Boil the milk with the vanilla pod split and scraped, once at a boil pour over the egg yolk mixture, whisking. Replace the mixture back into the saucepan and, over high heat, whisk constantly until the mixture thickens. Add the gelatin leaves, drained and mix. Pour the pastry cream into a bowl, shoot to contact and book cool.

Preheat the oven to 180°.

Press the dough on 4 mm and then garnish with a pie pan, poke the bottom with a fork and cook in white for 15-20 minutes. Let it cool down.

Mount the cream whipped with the icing sugar and then stir in gently the pastry cream has cooled. Garnish the bottom of pie preparation.

Peel the fruit and cut into slices and separate the pomegranate seeds. Have different fruit in wide strips on the pie.
