These pies are fine a great classic of my parents, my childhood I dégustais already this dessert which for me, still today, the taste of childhood and of family cooking. To give a little more crunch to these tartes fines, I added beans, which taste of almonds fits perfectly with the apple. But it is of course optional !!!
So, what is this that you wait to eat apples ?! I leave you with the recipe.
Tarte fine with apples and sugar-coated
Ingredients (for 6-8)
- 2-3 apples (here the boskoop)
- a dozen of dragees
For the compote
- 4 cooking apples
- 20 g of cane sugar
- 1 sachet of vanilla sugar
- 10 cl of water
For the sweet dough
- 250 g of flour
- 125 g of butter
- 75 g cane sugar
- 1 egg
- 1 pinch of salt
To prepare your sweet dough, work the butter and sugar by hand so that the butter becomes ” ointment “. Then add the whole egg, and work again the mixture. Add the flour and salt at once and stir until a nice smooth paste.
Form a ball and refrigerate 1 hour.
Preheat the oven to 180°.
During this time make the compote, to do this: peel and cut the apples into pieces and put them together with the sugar and water in a saucepan. Allow to cook for 25 minutes over low heat and then crush or mix. Book.
Lower the dough on 3-4 mm thick and cut out rectangles of about 15 cm by 6 cm.
Spread the compote on the pieces of sweet dough.
Peel and cut the apples into quarters and then into very thin slices. Have then the apple slices, making them overlap on the compote.
Crush the beans and add them on the tarts.
Bake for 25 min.
Enjoy warm or cold with a sweet tooth, a tablespoon of fresh cream or a scoop of vanilla ice cream !
