Tarts, chocolate praline for Easter

Ingredients (for 6-8 tarts)

For the chocolate ganache

  • 150 g of dough praline
  • 100 g of good dark chocolate
  • 25 cl of whipping cream

For the shortbread in chocolate

  • 250 g of flour
  • 200 g of butter
  • 100 g icing sugar
  • 2 egg yolks
  • 2 tbsp of cocoa powder
  • 1 pinch of salt

For the whipped cream

  • 25 cl of whipping cream
  • 20 g of icing sugar

Start with the shortbread dough, for this, mix together all the ingredients except the eggs with the tip of your fingers. Then add the egg yolks and a little water if necessary. Knead until a uniform ball. Cover with plastic wrap and refrigerate for 2 hours.

Preheat the oven to 180°.

Roll out the dough between two sheets of baking paper to 3-4 mm thick, cut out rounds of the size of the molds and place in the moulds previously buttered and well floured. Prick the surface with a fork and top with beans to avoid that the dough fails to rise. Bake for 15 minutes. Remove the tarts from the oven and leave to cool.

Prepare the ganache by mixing all the ingredients and heating it in a saucepan over low heat.

Pour the ganache into the tartlets are cooled, and refrigerate for 2 hours.

Beat the cream well chilled and the sugar together to make whipped cream and add it on the tarts before serving.

Decorate with little eggs !
