Thanks to the sweetness of the month of September and the beginning of the month of October, we can still enjoy some vegetables and summer fruits at the same time as those of the autumn. Tomatoes full fields of all the colors, a bit of basil and hop a nice tomato soup.

Tomato soup

Ingredients (for 2 bowls)

  • 1 kg of tomatoes of different varieties
  • 100 ml of water
  • 2 cloves of garlic
  • A few sprigs of basil
  • 3 tablespoons of olive oil
  • 1 tablespoon of red wine vinegar
  • Olive oil perfumed with basil


Slice the cloves of garlic and separate the stems of the basil leaves and slice the stems.
Heat in a large pan with the olive oil and sauté the garlic cloves and the stems for 2 min.
Add the tomatoes coarsely cut, the vinegar and the water and bring to a boil.
Let cook for about 8 min over medium heat until pureed.
Remove from the heat and mix according to your desires.
Divide into bowls and drizzle basil oil.

Garnish with a few basil leaves.
