The tortilla of potatoes I’m sure most of you know, a tapas-known and classic in Spain that I love !!! In short, a potato omelette, whatever ! But there is a version of tortilla of potatoes with fresh onions and parsley that I offer.
It has been several times in my vegetable basket is a bundle of fresh onions and I never know quite what to do with it… Then this afternoon, despite the heat, I took my courage in four hands and I started (not by the window, huh…!) in the preparation of a tortilla green for lunch (bah yes, Sir go eat so I can’t leave without anything !). And the result is really nice, it melts, it crunches, all that I love!!!
And then it’s not as if it was not super simple to make !!!
Tortilla of potatoes with fresh onions and parsley
Ingredients (for 6-8 people)
- 800 g of potatoes
- 1 bunch of fresh onions
- 40 cl of olive oil
- 6 large eggs
- 1 bunch of parsley
- A pinch of pepper
- Salt and pepper
Preheat the oven to 200°.
Peel potatoes and cut into thick discs of 5 mm thickness.
Put the olive oil to heat in a frying pan, take the potatoes and stir to coat them. Let cook on medium heat and covered for 5 min. Remove the lid and let cook for 15 minutes.
During this time, carve them up finely the onions and the bunch of parsley.
Beat the eggs, season and add the chilli pepper.
Put half of potatoes in a rectangular baking dish covered with parchment paper. Cover with a layer of onion and parsley and then repeat the operation once, and then pour the eggs over top.
Bake for 25-30 minutes.
Serve hot, warm or cold !
