This cake is the first cake I made at the exit of the maternity ward… a simple desire to get back to doing what I love, and make us happy in Mr. and me. So this is how I announce the arrival of mini Miss in our family, a beautiful baby who came into the world on the 6th of September ! This small chip occupies our days, so sorry if I will not answer always for the nice comments you leave me !

Let us go back therefore to the recipe, a base of four quarters (because it is easy to make, and that’s really good !), embellished with pretty yellow plums, for a cake all in greediness ! So, yes, I know it’s a four-quarter, but as I don’t like too sweet desserts, I lowered the sugar intake of about 30 %, but then you are really doing as you feel !

Upside-down cakes with plums

Ingredients (for a mould to be missed)

  • 400 g of plums
  • 4 eggs
  • The weight of eggs in flour
  • The weight of eggs in sugar (30% less for me)
  • The weight of eggs in butter
  • 1 sachet of chemical yeast
  • 1 pinch of salt


Preheat the oven to 150°.

Mix together the flour and baking powder and set aside.

Separate the egg yolks from whites and beat the yolks with the sugar until the mixture whitens. Add the butter previously melted, alternating with the mixture of flour-yeast.

Whisk the egg whites with a pinch of salt and then add to the preceding mixture.

Cut the plums in two, remove the stones and arrange them cut side vars from the top in the bottom of a mold a missed buttered-and-floured or non-stick. Pour the dough on top.

Bake for 50 minutes.

Remove from oven, let rest 5 minutes and remove from pan.
