I’m sure you know the waffles of Cork, these waffles brioche with sugar casson at inside, who caramélisent during cooking ! When we visited Brussels with Sir, we’re not deprived of this delicacy sold everywhere in the streets of the city. With whipped cream, fresh fruit or a chocolate sauce, the choice is yours but personally I prefer it just like that, nature !
I’m doing a miniature version of this famous waffle, for this, you just need to form smaller dough pieces.
So here, just for fun, a recipe to serve at snack time or for a Sunday morning brunch !
Waffle of Liège
Ingredients (for about 25-30 minis)
- 375 g of flour
- 190 g butter
- 2 eggs
- 20 cl of milk
- 1 sachet of baker’s yeast
- 1 pinch of salt
- 200 g of sugar casson
Put the yeast with 2 tablespoons warm water, let stand 10 min then stir.
For the waffle batter, put the flour into a bowl, make a well and add the yeast to the center. Work the dough between your fingers and add the egg, milk and salt. Knead the dough and stretch it, then add the butter. Knead the dough until it comes off of the bowl (you can transfer on the workplan for ease of reference). Add to finish the sugar casson.
Let the dough rise, covered under a tea towel for 2 hours.
Dégazez the dough with the point, then form the dough pieces of the desired size and let it again rest for 2 hours under a cloth.
Preheat the device to waffles, and then cook your dough pieces for about 4 minutes (the time will depend on your device).
